Before the invention of the knife rest in the late 1600s or early 1700s, even wealthy aristocrats did not have a fresh set of cutleries for each course.
A single guest would use one knife and fork for an entire meal that could span up to 12 courses.
To prevent juices, gravy, and grease from ruining expensive, hand-washed tablecloths between courses, hosts needed a place for guests to set down their dirty utensils.
While early versions may have been simple pieces of wood, silversmiths and artisans quickly began crafting dedicated, decorative rests.

The Golden Age: Victorian Extravagance (19th Century)
